Waste
Waste Reduction
Description of Action:
By using biodegradable containers we reduce waste. Also by reusing waste to make more products, we are not only reducing waste but increasing our products and profit. We contribute more than quality food to our community but also preferable organic pet products and candles.
Waste Reuse
Description of Action:
Chicken waste, bones and all, are collected and put into a pressure cooker. They are cooked until soft, packaged in paper soup containers and sold as pet food to our customers. Beef fat is collected and made into candles for sale in the store. Beef and ham bones are saved and frozen and sold as bones for pets. All of these products become profitable for the business and are using scraps of waste from the making of our soups and sandwiches. We save on average $75 on a candle making kit and the wax per candle costing around $1-$10. We are saving around $100 a month by making candles from waste and that is only one of our reusing processes. We are making a profit however of about $9 with materials we already have as soup waste.

Waste Recycling
Description of Action:
We have combined stream recycling in the store. All recyclables are collected without segregation and disposed in bio-degradable bags. The bags are placed in a recycling dumpster that is collected by global waste co. (a local recycling company). We use virtually no plastic, but recycle what we have (plastic forks and spoons, if people chose not to use the washable utensils available to them). Cans and glass from our food ingredients and beverages are all recycled. All soups, salads, and sandwiches are served in either recyclable paper and cardboard containers, bio-degradable/compostable products, wax paper, kraft paper, or bio-derived sugar-cane containers.
Food Waste

Description of Action:
As a restaurant, we have food waste. Plant-based food waste from carrot, cucumber, potato, etc. peelings are collected and taken to rock ridge farm in Andover, NJ where it is fed to their pigs and chickens. Between the produce scraps and beef and chicken scraps we lower our amount of waste by on average 15 pounds per day.
Energy
Energy Efficiency
Description of Action:
We only use LED lighting in our store as an effort to be energy efficient. The heating and air conditioning thermostat in our store adjusts the temperature automatically as needed by the time of day in an effort to save energy. Our refrigeration equipment is highly efficient and energy-star compliant. All of our other appliances, computers, and lighting is turned off upon closing (except security lighting), and also unplugged if able.
