Description of Action: 
Out of the numerous ways we provide low environmental impact products, all out packaging is compostable. Our vendor, WorldCentric, provides bamboo-based and other renewable material which help pull carbon from the air, are biodigradeable, and sustainable, which leads to reduced waste and a much lower environmental impact. Additionally, all of our food is sourced from sustainable, local, farms.

Description of Action: 
Food waste is reduced by modifying our menu to include items that would otherwise be food waste. For example, for our short ribs dish, instead of wasting the cartridge of the bone, we use that as a filling for our pasta and the meat as an entree. Also we do not overbuy, rather you use all the items we buy until we run out. We don't have a walk in freezer, since all of our food is used and waste is kept to the bare minimum. Any food that we do have, we donate to local food shelters.

Description of Action: 
Our state-of-the art oven recycles water in it's automatic cleaning mode. The small amount of water is recirculated for the entire cleaning cycle, and then one more for the rinse cycle. We also installed a tankless water heater for instant hot water, and not waiting for water to heat up.

We have been sharing with others how changing certain habits can benefit you as a business as well as the environment. Although we are offering prime quality product, our food costs are lower than the average restaurant. At least one other restaurant has begun to use products that we've recommended as are seeing the savings.

Our employees get one week vacation. All of the products we use in the restaurant to clean are 100% environmentally friendly and non-toxic, providing for a safe work environment. We encourage them to recycle at home and to develop environmentally safe cleaning habits. We teach them to share in our triple bottom line —planet, people, and profit—in order to encourage our team aspires to make their lives as environmentally conscious as possible.
