Adopt Environmental Policy Statement
Description of Action:
Environmental Policy Statement: Our brewery is a showcase for recycling, reuse and conservation. It’s not only good for the environment, but in the long run it’s good business. The cheapest electric (or natural gas, water, packaging, etc.) is what you don’t need to use.
Waste
Waste Reduction
Description of Action:
Bathrooms use high powered air dryers, eliminating all paper towels.
Waste Reuse
Description of Action:
All carpeting in offices was rescued–brand new–from the dumpster of a multinational company. All furniture was purchased used and then reconditioned.
Lbs Saved:
1,500
Waste Recycling
Description of Action:
We recycle all paper, metal, plastic, glass and pallets. We’re still looking for a reuse for shrink wrap, although we’ve dramatically reduced our use of it.
Food Waste
Lbs Saved:
2000000
Description of Action:
All our spent barley grain goes to a local dairy farmer for feed–last year that equaled more than two million pounds.
Energy
Energy Efficiency
Description of Action:
1. We’ve installed passive solar light tubes in the brewery that not only bring natural light into the building but greatly reduce the need for artificial light. 2. All electrical lighting will be high-efficiency fluorescents. 3. Our high-efficiency boiler works on demand requiring just a small fraction of the natural gas a conventional always-on boiler needs. 4. The roof has triple the insulation our prior roof did. A reflective surface reduces demand for cooling. 5. All the lighting in our offices are motion-activated high efficiency fluorescent. With funding from the NJ Clean Energy Program’s Direct Install program, Flying Fish Brewing Co. installed a high-efficiency boiler, air conditioning units, digital thermostats and retrofitted lighting throughout the brewery. The Direct Install program covered 70 percent of the cost, NJCEP incentives provided $28,414 of the $40,591 total project cost. The upgrades were estimated to save Flying Fish an additional 35,644 kWh and 637 therms per year, totaling about $4,015 annually. Specific Technologies: Efficient lighting; 5-ton and 10-ton packaged HVAC units; dual enthalpy and forced air heat electronic fuel-use economizers

Water
Water Conservation
Description of Action:
Our brew kettle recaptures all steam that would normally vent to atmosphere and create 1 gallon of hot water for every 5 gallons of beer brewed. Other savings come from reusing process water for cleaning operations.
Gallons Saved:
100,200
Stormwater Management and Site Design
Description of Action:
To start, approximately 15% of the rainwater that hits our roof is diverted to a rain garden to capture it and let it percolate back into the ground rather than rushing into Cooper Creek where it contributes to erosion. The garden features native plants that attract butterflies, native bees and hummingbirds.
Industry-Specific
Industry Specific Practices
Description of Action:
Our fully automated brewhouse uses several innovations that reduce the number of pumps required. The system also requires significantly less boil time per batch, reducing gas usage.
