Cherry Street Kitchen(CSK) is a concept that was formulated, developed, and brought to Trenton, NJ by Barbara Simpson and John Vadnais, opening in January of 2017. Modeled loosely after shared commercial rental kitchens in large metropolitan centers, CSK is a licensed public commercial kitchen that is designed to encourage small business food startups, as well as to service food companies that have outgrown their prior spaces. We are pleased to host many early stage food entrepreneurs that might not have been able to move forward without the commercial kitchen rentals we provide. Operating in a “recycled” Trenton ceramic factory that we thoroughly renovated for food production, CSK is dedicated to helping small and intermediate-sized businesses while encouraging environmental stewardship by our tenants and ourselves.

Description of Action: 
CSK has been able to recycle cardboard, metal cans, glass bottles, and #1 and #2 plastics on behalf of itself and its tenants, and it also has composted food waste. While CSK has been successful with these efforts, the programs are in flux, and it remains a challenge to find reliable and cost-effective programs for recycling and composting.

Hazardous Waste/Toxic Use Reduction
Description of Action: 
CSK utilizes Green The Cleaning® products from The Deirdre Imus Environmental Health Center® at Hackensack University Medical Center. This program strives to eliminate all cleaning agents containing hazardous ingredients and replace them with environmentally-responsible, less toxic products, and 16 of 20 of their cleaning products are third-party certified through UL EcoLogo or GreenSeal. As part of its kitchen services, CSK provides many certified cleaning products including GTC® All Purpose Cleaner, GTC® Clinging Toilet Bowl Cleaner, GTC® Hand Soap, GTC® Heavy Duty Degreaser & Cleaner, GTC® Glass & Window Cleaner, and GTC® Pot & Pan Detergent. CSK also provides DI-18 Sanitizer which, while not a certified green product, is EPA registered. CSK is pleased to utilize these environmentally friendly cleaning products.

Description of Action: 
In the kitchen, CSK installed all-LED lighting. This provided brighter light with less electricity, supplementing the natural lighting provided with new energy-efficient windows. In the outer storage area, CSK replaced its fluorescent lighting with LEDs, finding that due to the brilliance of the light, it could operate with fewer lights, saving even more electricity. Through these efforts, CSK has saved thousands of kilowatt hours of electricity that otherwise would have needed to be generated and distributed.

Description of Action: 
CSK made the decision NOT to provide a paper towel dispenser in its bathroom facility, but instead to use an electric hand dryer. Not only are paper towels saved, but the mess and waste of used paper towels are also saved. People seem to appreciate this extra measure of cleanliness. Studies have shown that energy-wise, this is far more efficient, and many cases of paper towels have not been purchased and discarded.

Description of Action: 
The building was deliberately selected to be in Trenton, NJ. Our thinking was that it would service the greater Princeton, NJ corridor, and would add to jobs and contribute to the economy in Trenton by providing local opportunity. Previously used for 50 years as a factory for Holland Mold Company, the building had several other uses prior to becoming a food facility. We renovated the building by adding kitchens and making numerous improvements, such that this 1952-era industrial building is now relevant to our times. We are pleased to be working in a “recycled” facility that has “good bones” and is extremely appropriate for this use.
